These gluten-free oat bars come together with minimal fuss. Because of the dark chocolate and the small amount of maple syrup, they’re only the tiniest bit sweet. If you have more of a sweet tooth, add a 1/2 cup of maple syrup.
Ingredients:
- 1 1/2 cups gluten-free oats
- 1 cup bittersweet chocolate chips (I used Ghiradelli’s 60% Cacao Bittersweet Chocolate Baking Chips.)
- 1/2 cup unsweetened shredded coconut
- 1/4 cup real maple syrup
- 1 teaspoon cinnamon
- 1 teaspoon salt
- 1 1/4 cups unsweetened vanilla almond milk
- 1 egg
- 1 teaspoon vanilla
Directions:
- Preheat oven to 350 degrees.
- Mix dry ingredients in one bowl.
- Whisk wet ingredients together in another bowl.
- Pour the wet ingredients into the dry and stir to combine.
- Press into a 9×9 baking pan spritzed with non-stick buttery spray.
- Bake for 40 minutes.
- Let cool and slice into bars.
